Arnaud Causse, our coffee partner from Ecuador, is an enthusiastic experimenter, and in addition to coffee, he also uses all parts of the coffee plant at his Las Terrazas farm.
Arnaud decided to use young coffee leaves of the typica variety. He was inspired by the Japanese way of processing green tea, where hand-picked coffee leaves were pulled over a large pan and then dried in the sun. The resulting product is a fine green tea with a sweet, delicious taste.
Recommended preparation:
Pour 4 g of tea leaves with 300 ml of hot water at a temperature of 80˚C, leave to infuse for 4 minutes and drain.
