Producer’s Story

This coffee comes from the talented processor Bang Hendra, his family, and their team known as Gayo Avatara. Hendra is a man deeply connected to nature, and his passion for coffee is renowned across Indonesia. After more than twelve years in the specialty coffee world, he has become a highly respected figure both locally and internationally, regularly ranking among the finalists of the prestigious Cup of Excellence competition.

Hendra’s approach to farming is deeply rooted in ecology. The Gayo Avatara team produces their own compost and relies exclusively on natural fertilizers. They plant coffee trees alongside endemic plant species, which not only helps preserve biodiversity but also strengthens root systems, prevents soil erosion, and supports water retention in the landscape.

Processing

The “Washed Dry Hulled” method is a careful, multi-stage process. It begins with meticulous sorting of freshly harvested cherries, followed by pulping (removal of the fruit skin). The key step comes next: the beans are soaked in alkaline well water and left to ferment for 24 hours, resulting in a clean and distinctive cup.
