Producer’s story
Until 2001, nearly all coffee growers in Costa Rica delivered their cherries to large cooperatives. This changed with the establishment of Cordillera del Fuego, the country’s first independent processing mill, founded and led by Luis Camposin the West Valley region. Luis is a true pioneer of innovative processing methods, including the anaerobic fermentationused for this coffee.

He works closely with the farmers who bring their coffee to Cordillera del Fuego, guiding them through the entire process. One of these producers is Ismael Navarro, the farmer responsible for this exceptional lot.

Zpracování

Tato anaerobní fermentace je specifickým procesem vyvinutým v Cordillera del Fuego. Po příchodu na stanici jsou třešně nejprve zbaveny slupky (pulping). Část zrn si ponechá svou dužinu (mucilage). Z druhé části kávy je dužina získána a zpracována na gel, kterým jsou následně všechna zrna v nerezové kádi pokryta.

Káď je poté hermeticky uzavřena. Po celou dobu fermentace, která trvá 18 až 23 hodin, je pečlivě kontrolována teplota a pH, aby se zabránilo nežádoucí produkci alkoholu. Po dokončení fermentace se káva suší na slunci na patiích po dobu přibližně 10 dnů.
