The Jaén region in northern Peru is a beautiful example of how the local coffee industry is transforming - from its former emphasis on volume to a real focus on quality. Farmers here grow choice arabica at an altitude of 1,750 to 1,950 metres above sea level. The volcanic soil, the tropical climate and the ideal conditions in the Andes produce a coffee with a unique flavour profile.

Ripe coffee cherries from daily harvests are brought by farmers to a warehouse in Jaén, where a rigorous quality control process begins. Here, the coffee is first weighed and undergoes a careful physical analysis to detect any defects. Small samples are then processed and three members of the import team assess the flavour and aroma during cupping.

Based on the score and the physical quality of the grains, the farmer receives a price quote. If accepted, the coffee is repackaged in special GrainPro bags to help preserve its freshness and quality until further processing.

This particular coffee undergoes what is known as natural processing - ripe cherries are dried on raised beds for up to 30 days to concentrate their natural sweetness and fruity notes. The result is a coffee with a subtle sweetness, juicy flavour and chocolate finish - in short, a liquid dessert.

Thanks to this fair and transparent system, farmers are paid fairly - often up to twice the normal market price. This motivates them to continue to improve quality and brings us exceptional coffee that you can enjoy in every cup.
