Peru Chontali

The coffee from the village of El Basal in the district of Chontali, Jaén province, Peru, comes from a small group of farmers who grow it on small farms of about 1.5 hectares. These farms are situated at an altitude of between 1 400 and 1 900 metres and it is these conditions that give the coffee its unique character.

The most common variety grown here is Caturra, but you will also find Bourbon, Typica and Catimor. In recent years, farmers have begun to plant newer varieties such as Castillo and Gran Colombia. The harvest takes place between July and September.

After hand-picking, the farmers wash and peel the coffee cherries and leave them to ferment for 48 hours. Drying takes place according to each producer's capabilities - either in sun tents for two weeks or on tarpaulins in the sun for about a week.

Once the beans are dry enough, they go to our coffee importer's warehouse in Jaén. Here they are weighed, analysed and tasted. Based on the quality in the cup, a purchase price is agreed. The coffee is then transported to Café Selva Norte SAC for final inspection and packaging before it travels to the coast.

Falcon Coffees (coffee importer) has been operating in Peru since 2018, when it opened its own warehouse with a tasting lab right in Jaén. This not only provides local farmers with a purchasing facility, but also the opportunity to taste their own coffee - often for the first time. Today, Falcon works with more than 275 farmers from 15 districts in the province of Cajamarca and three producer associations. A local team of ten people, including an agronomist, takes care of quality and logistics.
