Their farms grow exceptional varieties such as Parainema, Icatú, Geisha, Caturra, Java, Maracaturra, and Pacamara. All cherries are hand-picked and carefully sorted to achieve specialty-grade quality with SCA scores ranging from 82 to 90+. Sabio Coffee is also open to innovation – alongside traditional washed, honey, and natural methods, they experiment with modern fermentation techniques, including anaerobic fermentation with wine yeasts, giving the coffee a distinctive flavor character.
Sustainability is a natural part of Sabio Coffee’s philosophy. All farms operate on renewable energy sources – solar, hydro, and biomass – and the company is on its way to achieving carbon neutrality. The coffee grows under the shade of native trees that protect the soil, retain moisture, and support biodiversity. For every acre of coffee plants, at least one acre of forest is preserved, earning Sabio Coffee the Rainforest Alliance certification.
