Sabio Coffee is a family-owned coffee company from Nicaragua that combines a passion for specialty coffee with deep respect for nature, people, and the local community. Behind the brand are Dr. Enrique and Silvia Ferrufino, who, after years in the medical field, founded the project in 2004 based on three core values – quality, transparency, and sustainability.

At the heart of Sabio Coffee lies Finca Aurora, a farm located at over 1,200 meters above sea level in the Matagalpa region. The company owns several farms and oversees the entire production chain – from cultivation and harvest to processing, packaging, and export. This ensures consistent quality, traceable origin, and full transparency in every bean.

Processing

After harvest, the coffee cherries rest for 36 hours to allow their natural flavors to develop. They are then dried for 25 days on raised beds and aged for 11 weeks before the parchment is removed. Finally, the coffee is stored in Ecotact bags, which help preserve its freshness and aroma.

Their farms grow exceptional varieties such as Parainema, Icatú, Geisha, Caturra, Java, Maracaturra, and Pacamara. All cherries are hand-picked and carefully sorted to achieve specialty-grade quality with SCA scores ranging from 82 to 90+. Sabio Coffee is also open to innovation – alongside traditional washed, honey, and natural methods, they experiment with modern fermentation techniques, including anaerobic fermentation with wine yeasts, giving the coffee a distinctive flavor character.

Sustainability is a natural part of Sabio Coffee’s philosophy. All farms operate on renewable energy sources – solar, hydro, and biomass – and the company is on its way to achieving carbon neutrality. The coffee grows under the shade of native trees that protect the soil, retain moisture, and support biodiversity. For every acre of coffee plants, at least one acre of forest is preserved, earning Sabio Coffee the Rainforest Alliance certification.

The brand also stands for respect for people. The company provides over 150 permanent and 500 seasonal jobs, ensuring safe housing, food, healthcare, and education for workers and their families. It actively collaborates with local farmers and supports more than 20 communities, bringing stable livelihoods to thousands of families.
