Producer story

Las Lajas farm, led by Oscar Chacón Solano, is a prominent example of both traditional and innovative approaches to coffee cultivation in Costa Rica. Located in Sabanilla de Alajuela, this family-run farm was established on 50 hectares of land inherited from Oscar’s father. Oscar and Francisca Cubillo represent the third generation of coffee producers in the Chacón family, continuing a long-standing coffee-growing tradition. The farm cultivates highly regarded coffee varieties such as Caturra and Catuai, known for their distinctive flavor and aroma. Special attention is given to the processing of the Perla Negra microlot, which is dried on open patios for 22 to 30 days. The coffee is regularly moved during drying to ensure even and slow dehydration, contributing to its exceptional quality and unique flavor profile.

Las Lajas is also known for its environmentally friendly approach to farming. Shade trees are planted to create optimal growing conditions while supporting the sustainability of the local ecosystem. Additionally, organic fertilizers are used, produced from coffee processing byproducts and other natural ingredients. Hand-picking is another key element ensuring high quality.

Farmers carefully select only ripe cherries with high Brix levels, an indicator of sweetness and optimal ripeness. After processing, the coffee rests for at least 60 days before export, allowing its aroma and flavor to fully develop. Oscar Chacón and his family place strong emphasis on preserving coffee culture and tradition within both their family and the wider community. At the same time, they aim to provide stable employment for their workers, contributing to the social and economic sustainability of the region. This combination of family heritage, innovation, environmental responsibility, and social commitment makes Las Lajas a unique and highly respected player in the coffee industry.
